Surti Idada, also known as White Dhokla or Khatta Idra, is a traditional Gujarati steamed snack, particularly popular in Surat. Made from a fermented batter of rice and urad dal (split black gram), it is soft, spongy, and mildly tangy. The fermentation process gives it a unique flavor, and it is often seasoned with ginger, green chili, and a touch of asafoetida (hing) for added aroma.
